Vineyards & Viticulture
Young vines in white clay soils, selected plots. 100% native yeast, 50% permanent cover crop.
Vintage 2024
The year was marked by the worst drought in 30 years, with only 247 litres of rain between November and September. We had 70 litres from November to May and 40 litres in June. Although we used irrigation in August and September, it was not enough. Temperatures were normal from June to August. White yields were reduced by half and red yields by a third. The harvest had no weather problems.
Harvest
We carry out a precise and selective night harvest per plot. Harvesting in cool conditions helps us to preserve the aromas. The location of our winery within the estate favors a quality result since a minimum amount of time elapses from the time the grapes are in the vineyard until they reach the protected tank.
Winemaking Process
Very short maceration and direct press, fermentation in stainless steel tanks. Each variety is processed separately, fermented with native yeast and worked with lees for two months.
Tasting Notes
Clear and bright pink colour, aromatic and fruity, mainly of red fruits. Smooth taste and fresh, with a crunchy well-balanced acidity with long finish.
Food Pairing
With raw fish-sushi, quality tinned fish/shellfish (Spanish conservas). As a counterpoint to spicier Latin and Asian dishes, Thai yellow curry, or Chicken Tikka Masala.
