Vineyards & Viticulture
Our winery and family vineyards are located in Moixent, Valencia, at an altitude of 500 metres above sea level in a mountainous environment with an annual rainfall of 500 litres. We have 70 hectares dedicated to traditional viticulture, with unirrigated vineyards in sandy and white clay soils, using natural plant cover. We specialise in low yields to achieve excellence in biodiversity and organic viticulture.
Winemaking Process
Fermentation and maceration in stainless steel tanks within gravity-flow cellar for delicate gentle handling of the grapes. 100% native yeast use and in organic production suitable for vegans. Elaborated within its lees. Manual emptying by gravity using only grape must.
Ageing
Before blend half of the wine is aged for 6 months in 2.000 l. french-oak barrels and half of it is aged for the same time in concrete tanks.
Tasting Notes
Ripe mulberries, dark cherries, roasted herbs and spices. Quite a fruity and flavorful, medium-bodied palate with damsons and juicy black fruit that are dialed into the sweet tannins. Long and gentle finish.
Food Pairing
Meat dishes like grilled Lamb, BBQ ribs or roast chicken. Charcuterie boards with cured meats and cheeses. Mediterranean dishes like paella, tapas or a mushroom risotto. Truffle mac and cheese.
