Vineyards and Viticulture
Approximately 20-year-old vines and young vines located in selected plots with white clay soils, including a special clone from France. Early harvesting is carried out and 100% of indigenous yeasts are used, maintaining a permanent plant cover on 50% of the surface.
Vintage 2023
The year was characterized by significant drought from November to April. In May and June, 400 liters of rain fell, which, together with irrigation, allowed the natural cycle of the plants. Although temperatures in June and July were normal, August was extremely hot, accelerating ripening and forcing an early harvest. Although the influence on white grapes was minimal, some red varieties were harvested 2-3 weeks earlier than usual.
Harvest
We carry out a precise and selective night harvest per plot. Harvesting in cool conditions helps us to preserve the aromas. The location of our winery within the estate favors a quality result since a minimum amount of time elapses from the time the grapes are in the vineyard until they reach the protected tank.
Winemaking Process
Fermentation is carried out in stainless steel tanks using indigenous yeasts, worked with the lees for a month, and then aged in foudre for at least 4 months. During this process, no sulfites are added, keeping the tanks full and ensuring a quick fermentation.
Tasting Notes
Rich black and red cherries, herbs, and toasted spices on the nose, continuing with a pure and fruit-oriented palate. A direct and honest Garnacha that will please those who love the character of cherry in their wine.
Food Pairing
Its versatility and fruity character perfectly complement paella, rice, vegetables, legumes, grilled meat, cured meats, and cheeses.
