Plot located in high area, with white clay soil. 100% native yeast, 50% permanent cover crop.
Vintage 2022
Intense rainy season in the south from February to April. In May and June, high temperatures brought ripening forward. August nights were unusually hot, with temperatures around 18 degrees, and in early September there was a brief hail storm. The grapes waited until full ripening was reached.
Harvest
We carry out a precise and selective night harvest per plot. Harvesting in cool conditions helps us to preserve the aromas. The location of our winery within the estate favors a quality result since a minimum amount of time elapses from the time the grapes are in the vineyard until they reach the protected tank.
Winemaking Process
Fermentation and maceration with native yeast in stainless steel controlled temperature tanks.
Ageing
After alcoholic fermentation the wine is aged in foudre for at least 12 months.
Tasting Notes
Notes of black cherries, blueberries, currants, earth and baking spices. It’s medium-bodied with fine tannins. Dark, with black-fruit and spicy character all the way through. Peppery finish with excellent length.
Food Pairing
Red meats and game like roasted lamb, rib-eye steak or venison. Charcoal grilled steaks. Aged cheeses and grilled vegetables.
